Kimchi Recipe Using Ball Head Cabbage. Kimchi, also spelled Kimchee or Gimchi is a traditional food in Korea. Think of it as the Korean sauerkraut. Basic ingredients are usually Asian "cabbage, salt, ground hot pepper, and garlic. European ball head cabbage is used as well and makes a very good kimchi. Western head cabbage is easier to grow in a home garden and more available in grocery stores. Make a small batch of kimchee, let it lightly ferment and refrigerate. Eat with a variety of Asian foods. Kimchi is salty and we suggest holding back on soy sauce or other high salt ingredients. Not only is it nutritious, high in probiotics but it is one of those foods that is like salsa. Once you acquire a taste for it and discover new ways to use, it becomes a necessity.
